Every now and then, I get a craving for turnip greens. Not just any turnip greens, but the kind that melt in your mouth with just the slightest kick.

You can have this super easy, flavorful skillet of turnip greens ready in less than 30 minutes with just a few ingredients you likely already have in your pantry.
I used fresh greens from a bundle of farmer’s market turnips, but the recipe works just fine with bagged greens from the grocery store.
Try these out with vegan cornbread for a tasty, colorful combo.
Ingredients
- 1 tbsp olive oil
- 1/4 cup chopped onion
- 1 stalk celery, chopped
- 4 cups turnip greens (or other greens such as collard greens)
- 1 tsp brown sugar
- 1/4 tsp red pepper flakes
- salt & pepper
- 1 cup water (separated)
Instructions
- Heat olive oil in cast iron skillet over medium heat. Add onion and celery. Cook until onion becomes translucent.
- Add the turnip greens, brown sugar, red pepper flakes, & 1/4 cup of the water to the skillet.
- Cook down until almost all the water has evaporated.
- Add each remaining 1/4 cup of water and let evaporate 1/4 cup at a time. Once all water has been added & evaporated, the turnip greens should be tender (not tough & chewy).
- Taste and adjust seasoning if necessary. If the greens are still tough to chew, cook down with an additional 1/4 cup of water.
